Pesto Avocado Toast

Hello!

There is something incredibly comforting about toast: Warm crusty bread, a spread of your choice, somehow both crunchy and soft all at once. 
It's easy on the stomach and easy to make.

And extremely customize-able.

So while we are not reinventing the wheel with this avocado toast recipe, I still want to share it with you, as it is one of my favorites.

Pesto Avocado Toast

Servings:

Calories:

Utensils:
Toaster/toaster oven
Small frying pan
Spatula
Knife

Ingredients:
1 slice of bread
2 tablespoons of pesto
1/2 an avocado, mashed
2 eggs (scrambled)
Feta cheese (or any cheese you prefer)

Instructions:
Take your bread and toast it to your preference
While the bread is toasting, scramble your eggs. 
For a good scramble, crack both eggs into a bowl and whisk them together. 
Season with salt, pepper, and garlic. 
Fry the eggs in a greased frying pan and scramble using a figure 8 motion with your spatula. 
When your eggs are done, set aside.
Get your toast and spread a layer of pesto on it.
Next, spread the avocado over the pesto.
Top with the scrambled egg.
Sprinkle with feta.

Voila! Your pesto avocado toast is ready for breakfast!
